Cedar River Watershed

Only a few cities in the country are as fortunate as Seattle to have a pure, soft and delicious water supply that’s so ideally suited for the production of artisan beverages. It’s no surprise that Seattle’s coffee roasters, breweries, wineries and distilleries are industry leaders worldwide.

The Cedar River Watershed is more than 90,000 pristine acres, owned and protected by the City of Seattle for over a century.

Crisp, clear water from the Cedar River originates on the snowy peaks of the Cascade Mountains, fed by several glacier run-off streams in the high mountains. The pure, melted waters filter through volcanic and non-volcanic rock as it rolls 45 miles down the mountains to the watershed in Washington. The ice-cold, naturally purified water is then piped directly to many Seattle residents, including Unicorn Distillery.

Why are we so passionate about the Cedar River and its watershed?

Water is one of our main ingredients. Water quality is overlooked in many distilleries, but we believe — like the visionaries who inspire us — that greatness has to start with the best base ingredients. It’s why we chose Seattle as the home for the Unicorn Distillery.
