How does Unicorn Distillery’s tequila change in color?
We’d like to claim it’s magic, but the science behind our color-changing liquor lies in the butterfly pea flower. Commonly used in Southeast Asia for centuries, butterfly pea flower has a mild floral, earthy flavor when used to make tea — and a brilliant cobalt hue. The tea is infused into our tequila, giving it the magic-like ability to change color right before your eyes.
But how does butterfly pea flower change color? The color of the butterfly pea flower transforms depending on its pH level. For example, adding an acid like lemon or lime juice transforms the blue into a rich violet color. Adding tonic water (also an acid) lowers the pH even more and turns the blue to a bright pink.
