Beginner

Ingredients

  • 2 ounces Unicorn Butterfly Pea Tequila
  • ½ ounce lime juice (about 2 lime wedges)
  • 1-ounce lemon juice
  • 2 teaspoons agave nectar or simple syrup
  • 1 egg white*
  • 2 dashes of Angostura bitters
  • Cherry (optional)
  • Lime wedge (optional)

Instructions

Fill a cocktail shaker with Unicorn Butterfly Pea Tequila, lemon and lime juices, simple syrup, bitters and an egg white. Shake for about 15 seconds. Add ice to the shaker and shake again for 30 seconds. Strain into a glass, then garnish with a lime wedge and cherry. *To craft a vegan tequila sour, swap the egg white for 2 tablespoons of aquafaba. Aqua what? Aquafaba is the versatile liquid from a can of chickpeas that foams up like an egg white — it’s used in cocktails, baking and beyond.

What is a sour cocktail?

Sour drinks — think whiskey sour, tom collins, gin rickey, gin sour, margarita and paloma — are a family of cocktails that have a sour element as one of its main ingredients. The components making up a sour cocktail are a spirit, a sour ingredient (often lime or lemon juice), and a sweetener. Some sour cocktails include a frothed, shaken egg white at the top. This is to add textural interest as you’d enjoy on the foamy head of a beer.
